Watermelon Tofu Feta Salad

This Watermelon Tofu Feta Salad is refreshing, fun to eat, and packed with plant-powered goodness.

    Chop super firm tofu into 1/2 inch cubes.

    In a small blender , puree apple cider vinegar , lemon juice , olive oil , white miso paste , nutritional yeast , garlic , oregano , and salt .

    Add tofu and marinade to an air-tight container and place in the refrigerator for ⏱️ 12-24 hours .

    In a large bowl , combine watermelon , tofu , and basil .

    In a small bowl , whisk together olive oil , maple syrup , and vinegar .

    Add dressing to the large bowl and gently toss together.
